Fried
Rice
Ingredients:
*5cups of rice
*1/2small onion(diced)
*1Green bell Pepper(diced)
*1Red bell Pepper(diced)
*Mixed vegetables
*Meat(minced/diced)
*Shrimp/liver(diced)
*Oil
*Spices & Seasonings
Preparation:
*Boil rice until half cooked.
*In a separate pot, cook the meat and liver; adding onions and
spices & seasonings of choice until soft and tender.
*Strain out stock.
*In another pot, heat oil and saute onions.
*Add shrimps and pepper.
*Saute, then add the mixed vegetables, meat, liver, spices and
seasonings.
*Add the rice and stir gently.
*Simmer until tender.
*Taste for salt and correct seasoning.
*Serve.

Jollof Rice
Ingredients:
*4 cups rice
*2 lbs meat
*1 large onion (sliced)
*2 garlic cloves
*3 large tomatoes (sliced)
*2 tomato pastes
*2 large scoops of blended pepper
*Olive oil
*Curry
*Thyme
*Maggi
*Salt
Method:
1.Boil the meat
2.Add onions, spices and salt and cook until soft and tender
3.Strain the stock
4.In a separate pot heat olive oil and combine blended,
tomato paste, chopped onion, garlic, thyme curry, maggi
5.Allow to cook for a while
6.Add the strained stock and a little water suffient to cook
the rice
7.Taste for salt and simmer
8.Add the rice and allow to cook
9.Add remaining onion and tomatoes for added flavor
10.Cover and simmer until rice is done
11.Serve
NOTE: Blended
Pepper consists of pepper, tomatoes, onions, habanero chile
peppers, and so on. Quantity of each depends on desired taste.

TREATS

Chin-Chin
Ingredients
4 cups of flour
1/3 cup of sugar
1 cup of margarine
1 egg
1tsp nutmeg
½ cup of water
Method
· Mix all the ingredients together
· Knead and roll out pastry until it is smooth
· Cut into long strips then into cubes or shaped as
desired
· Deep fry until slightly brown
· Serve
NOTE: Dredge surface when rolling
out pastry.

Meat-Pie
Ingredients:
*5cups flour
*400g margerine
*Pinch of salt
Filling:
*600g ground beef
*2 potatoes (optional)
*1-2 carrots (optional)
*garlic
*1tsp Tomato paste
Preparation:
*Sift the flour.
*Add a pinch of salt to the flour to make the dough tasty.
*Mix margerine into flour until texture is sandy.
*Add cold water and mix gently
*Leave in the refrigerator for some minutes.
Preparation for filling:
*Dice carrots and potatoes.
*Boil the diced carrots and potatoes.
*Saute the onions and garlic in a separate pot.
*Add ground beef and cook very well.
*Add tomato paste, salt and seasonings.
*Add the carrots and potatoes.
*Taste for salt.
Method:
*Flour the working surface.
*Roll out the dough (pastry) and cut into desired shape.
*Put fillings inside the cut pastry.
*Enjoy
Puff-Puff
Ingredients
4 cups of flour
1/3 cup of sugar
2 tsp yeast
1 egg
2½ cups of lukewarm water
Oil
Method
· Mix all the ingredients (flour, sugar, yeast, egg
and water) together
· Set aside to prove (mixture will rise and double
in size)
· Heat oil in a pot for deep frying
· Use hand or ball shaped spoon to drop the mixture
into the hot oil to form balls
· Fry both sides until it is golden brown
· Serve
NOTE: Mix
only the side of batter to be fried.
Place puff-puff on napkins to drain excess oil

Okro
Ingredients
Okro
Locust bean (Iru)
Salt
Method
· In a small pot, heat some water
· Wash and grate the okro
· Add the okro
· Add the locust bean and salt
· Stir and let boil for 4mins
· Serve

Spinach
Ingredients
Spinach (fresh or frozen)
1 onion (chopped)
2 large scoops of blended pepper
Smoked fish/shrimp
Roasted meat/turkey
Locust bean (Iru)
Vegetable oil
Maggi
Salt
Method
· Wash the dried fish and shrimp thoroughly
· Heat oil in a pot and saute the onions, shrimp, fish,
iru and meat
· Add maggi and salt to taste
· Add the boiled blended pepper and allow to fry
· Check for taste and add the drained spinach
· Stir and steam for few mins
· Serve
NOTE: For
best nutritional value, do not cook vegetables for too long.
